Homemade Natural Yeast Bread


This bread is so easy to make!  I love that there are only 3 ingredients in it!  It makes for an excellent emergency preparedness food source!  And it tastes great too!  This very basic recipe can be modified, you can add oil or herbs or cheese or whatever you like.  Get creative!


1/2 cup natural yeast starter

2 1/2 cups purified water

2 teaspoons sea salt

6-7 cups bread flour (I like Lehi Roller Mill Turkey Flour)

Stir your natural yeast before using.  Measure out 1/2 cup and then feed your starter before placing back into the fridge.  Place the starter and water in an electric bowl fitted with a bread dough hook.  A standard glass bowl will do fine as well if mixing by hand.  Add your salt and stir together well using a Danish dough hook or fork.  Start to add the flour, 3 cups at a time, mix well and then add another 3 cups.  If the dough is still too sticky and not clearing the sides of the bowl easily add more flour until the consistency is tacky but not too soft.  Allow the dough to rise in a covered glass bowl overnight at least 12 hours or up to 24 hours.

Once the magic has created a beautiful spongy dough and it has at least doubled in size, remove from the bowl and place onto a well oiled surface.  Divide dough in half and knead a little bit making a nice round boule shape.  Either place onto a sheet of parchment paper and into a small pan to help retain its shape or place into a well floured bread basket to create beautiful rings as the bread rises.  Allow to double in size again for about an hour or so.  Towards the end of the rise time turn the oven on to 500 degrees and heat up a large ceramic dutch oven.  You can cut a venting X shape with a knife into the bread and sprinkle with flour if not using the bread bowl.  If using the bread bowl, turn dough onto parchment paper.  Set the bread with parchment into the heated dutch oven and cook with the lid on for 30 minutes turning the oven down to 425 degrees.  Remove the lid after 30 minutes and bake for another 20 minutes.  Bake your second loaf of bread and enjoy!
