Homemade Cheese Ball

A great starter to serve before a holiday gathering. You won’t believe how simple it is to make and the best part is you know what’s in it.  I like to serve it with organic crackers. Be sure to offer gluten free crackers too.

Recipe

1 package of cream cheese, softened

1 1/2 cups shredded sharp cheddar cheese ( I like Tillamook )

4-5 green onions, chopped

1 teaspoon garlic salt

1 teaspoon Worcestershire sauce

1 cup chopped pecans

Place the cream cheese in a medium size bowl and blend with a hand held mixer. Add the cheddar, green onions, garlic salt and Worcestershire sauce, mix until incorporated. Roll into a ball and then roll it through the pecans covering it. Wrap in plastic wrap and store in a container for up to a week in the fridge.

Mom’s Clam Dip

Okay this isn’t healthy and that’s why we only eat it once a year. But it is really delicious! You may want to double or quadruple the recipe for a large gathering. I like to serve it with Kettle sea salt potato chips.

Recipe

1 package cream cheese, softened

1/2 cup sour cream

1 can of clams, drained with some of the juice reserved

1-2 teaspoons Worcestershire sauce

Juice of half lemon

Sea salt and pepper

Place the cream cheese in a medium size bowl and whip with a hand held mixer. Add the sour cream, clams, Worcestershire sauce, lemon juice and salt and pepper to taste. Add a splash of clam juice to thin out and add flavor. Can be refrigerated for up to 1 week.

If you are looking for a healthier treat to curve those sweet tooth cravings, look no further!  This recipe is so wonderful!  The flavors of ginger, chocolate and dried fruit are hard to beat!

French Chocolate Bark

12-14 ounces combination of good semi and bitter sweet chocolate

1 cup roasted or raw cashews or almonds, coarsely chopped

1/2 cup dried peaches, chopped

1/2 cup dried cranberries

1/2 cup dried blueberries

1/4 cup crystallized ginger, chopped

Line a jelly roll pan with parchment paper.  Melt the chocolate in a double broiler over medium low heat.  Spread the chocolate onto the parchment paper and sprinkle nuts, fruit and ginger evenly.  Let set in the fridge for 10-20 minutes until set and break into medium size pieces.  Serve.

Seven Layer Bean Dip

Okay so it isn’t the healthiest appetizer, but the family loves it and is a great dish to add to a party or family gathering.

Recipe

2 cans refried pinto beans

4 avocados mashed

1 lemon juiced

Sea salt and pepper

2 cups sour cream

1 tablespoon taco seasoning

4 cups sharp cheddar cheese shredded

4-5 large tomatoes chopped

1 bunch scallions, sliced

1 can sliced olives drained

Spread the beans on the bottom of a 9 x 13 dish. Mix together the mashed avocados, lemon juice and salt and pepper to taste. Spread over the beans. Mix together the sour cream and taco seasoning. Spread over the guacamole. Shred the cheese and place over top the sour cream layer. Then add the tomatoes, scallions and olives. Serve with organic corn chips.

Popcorn 3 Healthier Ways

My kids love to snack… all the time! This is an inexpensive way to fill their little bellies until dinner time. These recipes are good enough to be served at a party for big kids too! Be sure to use organic popcorn or the popcorn I sell on my website that has been grown with very minimal natural chemicals before the plant flowers.

 

Savory Browned Butter Popcorn

1 cup unpopped popcorn (once popped it should make about 10 cups popped)

1/2 cup butter, browned in a small sauce pan on medium heat, be sure to watch it at the end so it doesn’t burn

1/2 teaspoon granulated garlic

1/2 teaspoon granulated onion

1/2-1 teaspoon coarse sea salt

1/4 – 1/2 teaspoon ground black pepper, depending on how spicy you like it.

Pour butter over popcorn and then add the rest of the ingredients. Toss and enjoy!

 

Sweet Cinnamon and Coconut Sugar Popcorn

1 cup unpopped popcorn (once popped it should make about 10 cups popped)

1/2 cup coconut oil melted

2-4 tablespoons coconut sugar or organic sugar

1/2 teaspoon cinnamon

1/8 teaspoon sea salt

Pour coconut oil over popcorn. Add the rest of the ingredients and toss. Enjoy!

 

Olive Oil Parmesan and Herb Popcorn

1 cup unpopped popcorn (once popped it should make about 10 cups popped)

1/2 cup olive oil

2 cloves garlic, minced

2 tablespoon parsley, minced

2 tablespoon chives, minced

1/4 cup Parmesan cheese, shredded

1 teaspoon coarse sea salt

Heat the olive oil, garlic and herbs in a small saucepan on low. Cook until fragrant and remove form the heat. About 2-3 minutes. Pour over popped popcorn. Add Parmesan cheese, sea salt and enjoy!

 

No Bake Coconut Cacao Bites

My kids beg me to make these for them all the time! They are a great healthy snack, simple and delicious!

Recipe

1/4 cup coconut oil

1/4 cup almond butter

1/2 cup maple syrup

2 teaspoons vanilla

1 cup almond flour

1 teaspoon sea salt

3 cups ground oats

1/4 cup raw cacao powder

1/4 cup shredded coconut (and more for sprinkling on top)

Mix all ingredients together in a large bowl and roll into balls. Sprinkle the extra coconut on top and enjoy!

 

 

Paleo Granola

Since I’ve moved away from gluten and dairy for the most part I have tried many new recipes. This paleo granola recipe is really good and can be eaten on anything that needs a sweet crunch. Use it as a topping for muffins, on top of yogurt or coconut ice cream.

Recipe

1/2 cup maple syrup

1/4 cup coconut oil, melted

1 tablespoon vanilla

1 1/2 teaspoons cinnamon

1 teaspoon ground ginger

1 teaspoon sea salt

1/2 teaspoon fresh ground pepper

1/2 teaspoon allspice

1/4 teaspoon nutmeg

2 cups chopped almonds

2 cups chopped pecans

2 cups unsweetened coconut flakes

1/2 cup sunflower seeds

1 cup dried cranberries or raisins

Mix all ingredients together in a large bowl minus the raisins. Place on a greased rimmed cookie sheet. Bake at 325 degrees for 25 – 35 minutes, rotating the sheet half way through. Store in gallon size freezer bag for up to 2 weeks in the pantry.

Peach Leather

Another great way to use all those peaches!  Peach leather is a delicious and healthy treat at our house.  It’s even more fun when you can make it with your kids at home!  You can try using other types of fruit too!

Recipe

5 cups  peaches (blanch if the skins don’t come off easily)

2 tbsp. sugar or honey

2 tsp. fresh lemon juice

Puree in blender or food processor until combined.  Pour onto dehydrating trays made for making fruit leather 1/4 – inch thick or line a jelly roll pan with parchment paper and spray with Pam.  In dehydrator, dry at 130 degrees for 8-10 hours or in the oven at the lowest setting (about 170 degrees) for 5-6 hours.  After 3-4 hours and the edges are firm and easy to lift, flip over  and continue drying.  Leather should be done when there aren’t anymore soft spots left, but still flexible.  Tear into large pieces and store in large gallon plastic bag.

No-Bake Energy Bites

These no-bake energy bites are so good and healthy!  Perfect for taking on a hike or field trip with the kids!

Recipe

You will need:
1 cup dry oatmeal
1/2 cup chocolate chips
1/2 cup peanut butter
1/2 cup ground flax seed
1/3 cup honey
1 tablespoon ground cinnamon (optional)
1 teaspoon vanilla
1/2 teaspoon sea salt
Mix all ingredients together and roll into 1-2 inch balls.  Enjoy!
