Coconut Pumpkin Soup

I have been loving this soup! It is so simple and great for just about all diets! It is so satisfying because of it’s high fat content. We are often on the go with the home build, so taking just a few minutes to put it all together and pouring into a thermos to drink throughout the day keeps me satisfied and going. The extra pumpkin seeds add a nice crunch!

Recipe

1 (15 oz) can organic pumpkin puree or 2 cups of another pureed squash

1 (15 oz) can organic coconut milk

1 tablespoon garlic chili sauce

1 teaspoon onion powder

1 teaspoon sea salt

1/4 cup sprouted or soaked pumpkin seeds

Place all ingredients except the pumpkin seeds into a small sauce pan and bring to a low boil. Add the pumpkin seeds and serve warm!

Home Build Update! December 2021

Hi Friends! It has been a while since I have posted. We have been very busy as you know, focusing on the home build. There is a light at the end of the tunnel and we are moving forward with anticipation and excitement. The journey has been long, but a blessed one. The floors are almost finished and cabinets will be installed this week. Trim, doors and then paint go in next. Thankfully we are hiring out the paint job and can focus on other things. Once they paint and countertops go in, the finish electrical, plumbing and banister/hand railings will finish the interior of the home.  Our goal is to be able to finish the home build by mid to late January as we have the exterior we need to install next and connect to water. Here are some of the projects we have been working on over the last few months.

The exterior doors and windows are all in. Final grade is just about finished. I love the rock walls for window wells.

Septic tank went in and is connected to the house. We just need to install the leech field.

Propane is our source of heat for the home.

The process of putting in the rough electrical, plumbing and HVAC took 2 solid months. Ryan did a great job on the plumbing and electrical. We hired out the HVAC which was a big job by itself! It was such a huge relief when we passed the 4-way  inspection. Insulation came next! What was really cool about our insulation inspection was the inspector said it was one of the best jobs he has seen and it was our teenage kids that did most of it!

Dry wall went in the week of Thanksgiving and took another week to mud and sand. It was such a sight to behold! Now it really is starting to look like a home! Each step means I don’t have to clean up that one thing ever again! LOL! I’ve spent so many days cleaning! I will go through each room when we finish.

My amazing kids helping to put in the flooring this last week. It will be another huge project we will be grateful for when finished in the next few days! Ryan is putting in the tile in the laundry room/bathrooms and cabinets were just delivered today! We will be hanging doors and trim this weekend to get ready for the paint guys to come.  Hopefully my next post on the home build will be the finished project!
