One Pot Chicken and Veggie Saute

This was a creation I came up with in my head while at the grocery store thinking of something new to make. I mus tsay I had to pat myself on the back for this one. Wow is it so good!

Recipe

2 tablespoons avocado oil

2 tablespoons butter

1 pound chicken breasts or tenders

1 package spicy Italian chicken sausage

2 small zucchini, chopped

1 small yellow crook neck squash, chopped

1 small onion sliced

sea salt and pepper

1/4 cup Parmesan cheese, shredded

Saute the chicken and Italian sausage (if not cooked) until browned and thoroughly cooked in 1 tablespoon each of the oil and butter. Add the onion and squash, salt and pepper and remaining oil and butter, until softened. Top with cheese off the heat and serve with rice and a green salad.

Every time I go to Costco I pick up a rotisserie chicken and make this salad. It’s simple, filling and yummy!

Recipe

8-10 cups mixed greens of your choice

1 whole rotisserie chicken, chopped

2 Gala apples, chopped

1/2 red onion thinly sliced

1 cucumber, chopped

1/2 – 1 cup feta cheese crumbles (optional)

Toss ingredients together and serve with your favorite ranch dressing.

 

Waldorf Salad

This is my version of a Waldorf salad. Simple and one of those filling feel good meals.

Recipe

8-10 cups mixed salad greens of your choice

1 whole rotisserie chicken, chopped

1 package turkey bacon cooked and chopped

1/2 thinly sliced purple onion

1 cucumber chopped

2 green apples chopped or sliced

1/2 cup dried cranberries or cherries

1/2 cup chopped walnuts

Toss  ingredients together and use your favorite dressing.

I like to blend 1 cup olive oil, 1/2 cup balsamic vinegar, 3 tablespoons honey, sea salt and pepper. Delicious!

 

My Favorite Summer Breakfast… or Lunch

My Favorite Summer Breakfast

I love fresh eggs, basil and tomatoes all from my own backyard!  This meal is filling, packed with protein and has amazing flavor!

Recipe

1 Ezekiel Sprouted Whole Grain English muffin, toasted and buttered or with avocado slices

2-3 eggs scrambled with onion powder, sea salt, pepper and a little mozzarella cheese

2 tablespoons chopped fresh basil

1/2 cup grape tomatoes, cut in half

Lavender Lemonade

You would be surprised at how good this refreshing drink tastes if you haven’t tried it before!  I love Costco’s organic lemonade for this recipe!

Recipe

Make a strong lavender tea by placing 1 tablespoon dried lavender buds into a mesh tea ball or muslin satchel.  Set aside and boil 1 cup water, remove from heat and allow the mesh ball filled with the herb to steep in the hot water for 20-30 minutes.  Pour the tea into a half gallon of your favorite lemonade and serve over ice.  Enjoy!

Rustic Plum Tart

Rustic Plum Tart

It’s that time of year when the fruit is in season!  I love a good dessert, especially if I can use what I grow!  This tart is so simple to make and very tasty!

Recipe

For the Crust:

1 cup all-purpose flour

1/4 cup yellow corn meal

1/2 teaspoon sugar

1/2 teaspoon sea salt

1/2 cup cold butter, cut into small pieces

In a food processor blend the flour, corn meal, sugar and salt.  Add the butter and pulse until mixtures resembles coarse meal.  Add/pulse about 2-4 tablespoons cold water until just combined.  Wrap dough in plastic and chill for 30 minutes.

For the Filling:

1 1/2 lbs. black or red plums, pitted and sliced into 1/4 inch thick pieces (about 6 plums)

1/2 cup sugar

1 tablespoon flour

Mix ingredients together in a bowl.  Roll dough out into a circle shape about 1/4 inch thick on a well floured surface.  Place plum mixture in the center and start to roll the edges in, overlapping as you go, allowing the center to stay open.  Carefully, with a large spatula transfer the pie onto a rimmed cookie sheet lined with parchment paper.  Put back into the fridge and heat the oven to 400 degrees.  Just before baking sprinkle pie with sugar and cinnamon if desired and cook for 45 minutes.  Allow to slightly cool and serve warm or at room temp with whip cream or ice cream!

 

Garlic and Basil Tomato Pasta

Garlic and Basil Tomato PastaSimple and fast!  This is a great recipe for using all those fresh tomatoes and basil from the garden!

Recipe

1 pound uncooked whole wheat pasta (I like angel hair)

4-5 pounds tomatoes, large or cherry cut in half or bite size chunks

2 tablespoons garlic, minced

1/2 cup fresh chopped basil

2 tablespoons olive oil

2 tablespoons butter

salt and pepper to taste

1/4 cup Parmesan cheese, shredded

Cook your noodles following the directions on the package.  In the meantime, chop the tomatoes, garlic and basil and place in large bowl with oil and butter.  Remove the noodles from the pot and strain.  Pour them while still hot over the tomato, basil mixture and let melt the butter.   Add salt and pepper to taste and the cheese.  Toss well and serve.

Fresh Canned Peaches

Fresh Canned PeachesI love this time of year when the fruit is on in abundance.  Peaches are one of my favorites!  This recipe is simple and a healthier version of the stuff processed in syrup.  I usually buy 2 large boxes form the farmer’s market to make 20 quarts plus some for making fruit leather or jam.

Recipe

Fresh Peaches

1 tablespoon organic sugar per quart

1 teaspoon citric acid per quart

Boiling hot water

Blanch the peaches for 30 seconds.  Remove the skin and pit and cut into slices.  Place peaches in jar filling to rim.  Add the sugar and citric acid.  Pour boiling hot water into the jar until there is a 3/4 inch space to the top.  Clean the edges and put on lids and rings.  Process for 25 minutes.

Vegan Tai Salad

Vegan Tai SaladThis dish is gluten free and very healthy!  Delicious too!

Recipe

1 package brown rice noodles, cooked according to directions on package

1 head Napa cabbage, chopped

2 cups bean sprouts

2 cups sugar snap peas

2 bunches green onions

2 cups shredded carrots

1 bunch cilantro, chopped

1 bunch mint, chopped

1 bunch basil, chopped

1 red bell pepper, chopped

1 yellow bell pepper, chopped

sesame seeds (optional)

Sauce

2 cloves garlic, chipped finely

2-inch ginger root grated

1 teaspoon chili sauce

2 tablespoons apple cider vinegar

2 tablespoons soy sauce

1/2 cup peanut butter

1/2 cup honey

Place all veggies, herbs and noodles in a large bowl.  Mix together all the ingredients for the sauce.  Mix together just before serving.

Strawberry Mango Guacomole

Recipe

4 medium avocados, chopped

1/2 red onion chopped

2 ripe mangos chopped

3 cups strawberries quarterd

2 jalapeno peppers chopped

1 bunch cilantro chopped

2 limes juiced

sea salt and pepper to taste

Gently toss all ingredients together and serve.
